Mardi Gras is French for "Fat Tuesday", also called Shrove Tuesday.

Historians at the Pink Palace Museum say the city saw the celebration as a way to bounce back from the civil war and reconstruction.

Flower grower Erik Van Wingeden said Catholics giving up candy for lent will be able to enjoy flowers but not candy on Ash Wednesday and Valentine's Day.
